Looking for suggestions on a safe/secure place to park the truck while I'm home on weekends (Sat night - Mon morning). Preferably near Int'l Speedway and Spring Garden area in DeLand. Thanks in advance.

Go over to Deland Airport there are tons of places to park. Use Google map earth settings and you will see Industrial blvd.
On Edison Dr. in that area, I usually see trucks parked on Edison Dr. and Industrial, they have a lane for truck parking. Crete also has yard there so trucks are a common in that area.
