About: This is an easy recipe that doesn't take up loads of fridge or cooler space. Just keep the meat cold. Potatoes, onions, garlic and kale are fine at room temp. Wilted kale is fine, too. It's just going in soup. So quick to prepare and hot and hearty, it's hard to keep from eating the whole thing. If you have a bigger crock, you can double this recipe.
Zuppa Tuscana ala Miss Elvee
(Tuscan Italian Sausage Soup)
3 servings - or 2 if you're hungry
YOU NEED: CROCK POT
Time: about 15 min total prep and 3-5 hour cook time. Start it on your 30 for a hearty meal at quittin' time.
1/2 lb HOT Italian Sausage. (Get the loose stuff if you can, links work in a pinch, just slice 'em)
1/2 chopped yellow onion (see potatoes)
2 chopped potatoes (or you can use a 1/2 bag of Simply Potatoes from the freezer section - already has onion!)
1 clove garlic (or 1 Tbsp pre minced, or a Tbsp or 2 of garlic powder)
16 oz of chicken stock (find it in the canned soup aisle. Go low fat, low sodium. The sausage is plenty of both.)
1/2 cup milk (4 oz) ( I use milk instead of cream, bit better for you)
1/4 bunch of kale (just grab a fistful from the produce section. if they sell it in bunches, grab 1/2 to 1/4 of it)
2 Tbsp flour (you can sub out for Wondra - stays closed in truck and easy to thicken with, can will last a year)
salt, pepper
red pepper flakes (use the leftover from that pizza you got last week!)
Line your crock pot with a bag. Crumble in the sausage, or drop in the sliced links. Add garlic, potatoes and onion. Cover with chicken stock. Cover and cook on med for 3-5 hours depending on your crock. If it's smaller, go longer. Right before you eat, mix the milk and flour together well. Pour into crock. Add kale and stir to combine. Cover and cook for 30 min, or until the soup has thickened slightly. Season with salt, pepper and don't forget the red pepper flake! That makes the dish!
Tip: While this is cooking, I'll toss a salad together and toast up some garlic bread in the electric skillet.
