What is the best way to drain them? I usually turn the valves when I park fornthe night and leave them that way until the morning pre trip when I build the air back up because I don't want moisture building up over night. Am I doing it correctly. Is it bad to leave them open like that? Could they freeze during winter open? How many times should I drain them during the colder months? When I don't drain them the check engine lights cone on and I loose power to 55mph if I keep driving I loose power to 3mph and then have to do a regen. is this problem directly related to the air tanks not being drained enough?

If your truck has a working air dryer (as virtually every modern truck does) you should not be doing as you're doing. When you open the valve, do you see actual water blowing out? I doubt it. Pull the cable or turn the valve momentarily once every several days should be more then adequate if your dryer is working. But do not leave open to drain all air. This is a waste of time and a runs a risk of having other issues.

I wouldn't leave valves open all night in some of the cold states I run in..
but I only drain my tanks 1-2 a season and then I do it when I am on a southerly run in warm weather.

I only said troll because I wouldn't expect anyone with at least a day of training to assume that the air tanks and the engine derating were somehow related.
Def will derate, low coolant will shut it down.
If I was you I'd ask for more training or your gonna have a very rough time out here. -
Power loss and regen are exhaust issues. Either no DEF or has to burn particles off of the exhaust filter. If it happens too often you may be idling too much or have a problem with your exhaust system. Has absolutely nothing to do with your brakes.
