What are the most common engine issues experienced with typical otr diesel engines. Examples I can think of would be fuel gelling in cold weather, and carbon buildup. Thanks

None really. At least not for me.
Gelling is really a thing of the past these days. Carbon buildup can be headed off with a good fuel additive.

The most common are probably after treatment sensors . If your running a newer truck most sensors can be changed by driver . Airlines , tires and numerous small things .

Most common truck issues are definitely lamps.

Engine is running in derate on bad roads. Cost me 2 loads today hauling crude in West Texas.
