Anyone know of a microwave that's also a air fryer that works with a Apu? I currently got a microwave but those combos look tempting. But unsure if the Apu can handle it.

Depends. You've got to look at the numbers.

How many watts is the appliance?

    Which APU?

    Which inverter?

    How many truck batteries?

No idea on wattage. Because haven't looked for one yet.
    Apu is a thermo king
    Inverter I have no idea.
    2 batteries I think.

MOST air fryer microwave combos are going to be in the 900-1200 watt range which over a few minutes will be fine especially with a 1500-2000 watt inverter. That said get 2 more batterys. I recomend a couple of deep cycle marine batterys or a quad of them rated for the amps needed for your rig. Bit pricy but will prevent battery damage or dead batterys.

Running it 12 minutes+ is going to be brutal on those 2 lone batterys moreso if they are standard flooded as there is a high chance they will go below the 50% mark. This is futher compunded if you only have the trycant with a 65 (amp not volt derp) alt. If you run the main engine while its in air fryer mode with just 2 batterys...maybe. Otherwise better batterys should be more then enough.

It's a company truck so. I'm not planning on ever getting my own. So can't do anything about the batteries

If it aint yours just get a good pure sine 2000 watter and send it. You can ask for deep cycles worst they do is say no. But keep in mind an air fryer nuke can peak at 1800+ watts depending on how high you set it with a huge power surge. So quality is the name of the game with inverters. Myself i usually just run my little 700W nuke and am quite happy.

I have the galanz micro air frier combo from Walmart. I ran it for a long time on my carrier apu which has its own generator. That broke and I’ve been running it on my 2500 watt inverter with the truck running. It won’t work with the truck off for very long.

Just a heads up, the combo unit is not a true air fryer. It takes 30 min to cook a steak. But it works awesome as an oven for rolls and such. I’ll keep it but I think I’m going to try a different air fryer as well.
