First truckstop I've been to that has a JJ sandwich shop. I'm definitely digging it, beats the heck outta subway!!! Good shower, coffee and parking as well.

JimmyJohns is so fast sometimes they have my sandwich ready before I even walk in the door.
I hadn't even decided what it was going to be.

I do the same
In my previous trucks I had a countertop skillet
Stuff like the pic is pretty easy to throw together. Better. Cheaper blah blah blah
This is just chicken. Cilantro. Chipotle peppers from a can. Lemon and lime juice. A little salt pepper garlic white wine vinegar heat and stir
Some Ben’s lime rice and romaine lettuce
Make enough for a few days and it’s even quicker to reheat
With my truck now it’s so much nicer and easier having a small kitchen but the skillet thing or instant pot can work just as well just need to move more things around
