I'm used to mexican not being enchilidas or nachos or anything like that. That is considered Tex/Mex for me. I see mexican as the native foods of goat's meat or Menudo or other natural foods as such.

They have chile verde, and colorado, costillo de res, all kinds of stuff. It's the real deal, being from central california, I grew up on a lot of good mexican food, and it's one of the few places I've found on the road I really like.

Eons ago I got the Mexican combination platter at a truckstop, a taco, enchilada, and burrito, but instead of refried beans, or spanish rice, it came with Tater Tots! But it was in the TA in Boise Idaho, so I guess that makes sense in taterland!

Another good place to get Mexican food is at the restaurant next door to the Pilot in Van Horn, Texas.

I ate at this taco joint Thursday in Texas on i20 it was called dukes truckstop. But the taco joint was called taco casa it was good.

And if your going thru Tucamcari NM jump off 40 and get on main street RT66 and stop here, good parking next door.
