How do the majority of owner operators get the good paying military loads? Through a broker? If so, what are some good brokers for getting access to these loads?

There's a reason why you don't see Swift doing. They used to pay 40 days out. A lot of drivers couldn't wait that lone to get paid. I don't know how far out they pay now.

I don't know the answer to that question.
However there are Defense Depots around the Nation into which you will carry a container and pick up a load going to another Defense Depot or onto ship for Europe or some such.
The questioning that is given to you as a company driver by the military is pretty intense depending on what is in the box.
Many times the bills show unit count one and the weight, say 50,000 pounds in the box. And that is all you know about that box.
Once in a while you have the experience of witnessing a loading of a government load and understand where it's going. I once had a Egyptian Ambassador from the USA assigned to Egypt collect a brand new car that went into my empty box and was secured to the floor before I took it to a Mediterranean bound ship.
Once in a while.
Most of the time you know nothing about the contents of that box. -
Is there such thing as a well paying military load?
