You are putting a side kit with tarp on a flat bed, correct?

I used to pull a Conestoga wagon, it all depends on the load and where you load and unload with respect to the side kit.

When picking up or delivery just pull the bungees front to back, flip the tarp over to the passenger side of the trailer and have then load from the drivers side.

A few times and you will be flipping bows fast, just keep in mind to watch the bows and not bend them. If your flatbed does not have deck chains or d rings for securing just set up your sideboards and take a small fine blade reciprocating saw and cut small V notches at the stake pockets.

It depends on what you load and how they load it. We used to haul palletized lumber which they loaded from a dock, no need to break down anything. Something like coils loaded by an overhead you will only have to undo the tarp and move a couple bows to get it on the trailer. Steel loaded from the sides you will have to undo the tarp, take the bows out and take down one or both side, depending on how they load.
