Good article. I’ve kept a jar of peanut butter and a spoon in the truck for decades. Good protein hit when you need one and easy to grab!

Peanut butter and tortillas are about the only things I eat when out in the mountains for days. Low carb so I don’t have to give myself a bunch of insulin, and loaded with calories and protein to help power through the miles of walking. Wouldn’t waste time packing anything else.

I read peanuts and specifically, peanut butter, is the most over processed foods we have. I used to enjoy eating cold peanut butter right out of the jar, until it began making me sick. Research showed I wasn't alone. I think "natural" peanut butter is better, but at $10/jar, they can kiss my,,,

How long have you had Type 1 diabetes?
I know a guy that was born with Type 1 and he's doing real good in life. Healthy and making real good paychecks as an aircraft mechanic. He went to school for the aircraft mechanic job.

Many a evening I’ve scarfed down 2 or 3 spoons of pb & called it good. Pb & jelly sandwich with a sliced up banana is a treat.
