In the age of next day deliveries being the norm and OTR companies taking on a more regional feel at times, I figured I’d list a few decent sized carriers that I’ve either driven for or seen run west coast as well as the rest of the country. Some of us OTR junkies that live in the Midwest or east want to go West, but sometimes doesn’t happen for months.
Schuster: Drove for them for a year. Frequently running I-80 to I-15 towards Los Angeles. I-70 is not allowed west of Denver. Occasional PNW runs. One of the benefits to Schuster is the backhauls from CA are commonly ice cream loads to the east coast. So, you will get lots of I-15/I-80/I-40. Runs all the way down to Miami and everywhere in between, so you’ll find yourself all over the country regularly if you stay out 3-4 weeks.
GP Transco: Dry van company that does a lot of Midwest, but will occasionally stumble out west. Barely any Cali, but they do run Arizona and PNW on occasion. LOTS of Denver and runs through the Dakotas, which might be as far west as some want to go, since it avoids the rough terrain. Some runs to northern Nevada as well. Lots of east coast, and a fair bit of southeast and TX, so you’ll see a fair bit as well. Even some runs to the MI upper peninsula and other areas most companies don’t ever see.

While most companies seem to stay east of Denver, they all occasionally get out to Phoenix or Los Angeles. I always pay attention and make a mental note of companies I see in every state I travel. In the unlikely event that I make a move, it'd give me an idea of who may pique my interest. In recent years. I haven't gone farther west than Phoenix or Ogden. Though last time I went to Phoenix, back July, I was surprised to see Butler Transport, Venture Logistics, and Woody Bogler out there, but that was only because I thought they east of Denver too. I saw them coming out of that spot in Tolleson where ya load Gatorade. As fast as Phoenix has grown, you're liable to see any company out there.

During my time with (what's now part of) Bison USA I ran west pretty regularly--mostly out to Spokane, Seattle/Tacoma and Portland, since the company had great relationships with the lumber yards out there that could guarantee a backhaul back east (and by east I mean back to the Dakotas). Granted, I worked on the flatbed side, but I think the van guys got out there pretty regularly, too.

California Overland out of Wabasha, MN... its right there in the name. Lots of solo runs from the Midwest to CA and back.
