This article on Snopes.com will not completely answer your question but might allay the worst of your fears. Arby's roast beef is not made from some sort of meat-flavoured congealed gel. Arbys has some kind of Sub with steak/onions/mushrooms on it. I was sight seeing ( Lost ) last week in Eastern Ohio in the POV. No clue what I ordered ( It was a #8 or #9 ? ) came back to PA and it wasn't on the Menu this week. It was better then the roast beef, Feeling violated, Didn't know what it was and so dang yummy.

So, ya want to know about how this works? Cargill is an exception... cows in one end, and cased meat out the other. The older way of doing it is for the animals to be slaughtered and minimally processed at the slaughter house. Then we ship the carcasses to the processor. So (you asked) shipping takes the form of chucking dead, gutted chickens (aka "chicken frames") or chunks of meat in "combos." A pallet with an open topped cardboard container, lined with plastic. You chuck a ton of dead critter and lots of dead critter juices in 'em, roll about 18 or 20 combos in the ol' reefer trailer, and go truckin' down the road.
Now the fun begins. Beef combos sometimes bleed a good pint out of the drains every time ya stop. (Yeah... that's blood driver. I had about all I could take from my last student! BWAHAHAHAHA!) Chicken frames are the grossest though. That goop comes gushing out sometimes... revenge on tailgaiters! Ya know they're gittin' some when they pass ya madly running the windshield washer ! LOL!! I had a county Mountie pull me over a few weeks ago... concerned citizens had been calling in. Officer: "You know you have fluid coming out of your trailer, what's in back?" Me: "Chicken frames!" Fortunately, this is rural America where the process of feeding all of the rest of our sissyfied fellow citizens is well understood. He just smiled, and told me to be on my way.
A hundred years ago, we were still close enough to our roots that everyone knew how this worked. It takes a lot of death to feed y'all. Its ugly, and yeah, these days you probably don't want to know. In fact, if you got your head inside of how the process works, a good portion of y'all would probably be turning vegetarian.
So, don't be tailgating that reefer trailer... no telling what's gonna be spewing out at the next bump in the road!

However, unless you want to stick your roast beef into a blender, add brine (Salty water), and their "select blend of spices" and then blend until the mix is nothing but slurry... You won't be making this at home.
95% beef
5% beef, brine and spices mixed
It's actually pretty simple, but most people get grossed out at the idea of where their food really comes from.
The remaining process is as follows:
Slurry is placed into a mold and then frozen solid. Packaged into 6 pound block and then shipped into arbys everywhere. In store, this frozen slurry is cooked and then sliced into the thin slices that we all know.
Actually, far as fast food goes Arby's is among one of the better places to get meat. How it's made is still odd, but while arby's isn't my favorite it still works well!Last edited: Feb 9, 2015

I tell you what and this is one thing I try not to do to often because it isn't healthy, but usually on the weekends I go down to the railroad tracks in Berea, Ohio and there is an Arbys on Bagley Road not to far from there and I like to get a large chocolate shake from Arbys.
Arbys does make a very tasty milk shake. It's very similar to Wendy's Chocolate Frosty. (Partially because Wendy's owns part of Arbys.)Shaggy Thanks this.
