What would the normal suspension pressure gauge reading be on this truck, at 34k lbs ? Only has 53k miles, and it handles like doo doo. Trying to figure out why. Essentially a new truck. T680s are usually pretty stable.

Not every truck reads the same.
I've been driving the same truck for 8 months now. It reads higher then what it started out at. -
Practically every truck I've driven in the last 27 years has shown right around 60 psi at 34k lbs. This truck shows about 50 psi. I don't think it's a radically new design from what I can see. There has to be a reason for this bad handling.

Doo doo handling is a pretty broad definition.
Need more specifics of the doo. -
Specifically, it handles sloppy. Too much pitch and sway. Some wheel hop on the drive axles. Handles like the truck is overloaded, but it's not.

I can control it. Just a bit sloppy. All the steer axle components look good. Only possibility I see there is shocks. They put cheap ones on at the factory.

50 sounds correct on the gauge. Also, I second a 3 axle alignment. Sometimes depending how it’s off I’ll notice the 680 feels a little “tippy”. That’s not normal or how it’s supposed to feel.

My 2019 T680 with a reefer at 34,000 pounds on the drives reads about 60 on the gauge. I have 31,500 on them right now and it's reading 55. That's with my 5th wheel slid all the way back which doesn't handle as well, but I know my steers are legal with 34 on the drives.
